The real pearl sugar from Belgium is mad from beet and not from cane. That's why the Belgian pearl sugar is not melting totally when heated. My waffles were really heavy, and I don't think they browned very evenly either..not enough heat maybe? My mother has a very old wok - older than me, and blacker than sin, which she NEVER washes with detergent, just water.
